Matcha from Honyama in Shizuoka, an area better known for sencha than for matcha. It runs lighter in body and flavor than the richer matchas of Uji or Yame, with a clean character the Den's team compares to fresh mountain air. Honyama tea was a favorite of the shogun Ieyasu Tokugawa four centuries ago.
