Fine, just fine
Everyone has their first Ippodo and Sayaka is mine. It's perfectly competent. There's mild umami, a slightly bitter edge, finishes clean. The price is reasonable for what you get. I just wouldn't reach for it when I have anything more interesting in the cabinet. Probably good for someone migrating up from grocery store matcha.
Easy latte choice
Sayaka has been on the list for a while and it lives up to the reputation. Mild umami, slight bitterness, very clean. Very easy to whisk and it foams well. As a latte you can taste matcha clearly without it being aggressive. Price has crept up but I still think it's reasonable for the consistency.
Good all-around matcha but not worth hype!
Sayaka is very tasty but I don't think it's as good as everyone hypes it up to be. The umami is noticeable and bitterness is mid-level. I used it for lattes before the price increases in 2025. Now, I think there are other options more worth the price.
