TL;DR
A well balanced, good value Uji matcha that lacks some of the refinement of competitors.
Prepared as
The first thing I noticed about Matsu was its beautiful microphone as I whisked it in my chawan. The foam is almost white, hiding the deep emerald green brew beneath it.
Next was the taste. It starts a bit flat, then has a slight bitterness, which then quickly gets covered by subtle umami and sweetness. It's an enjoyable, well-rounded taste profile overall. Mouthfeel is smooth.
At just over $1 per gram, Matsu is a good value for those that like a well-rounded, but not particularly punchy Uji matcha. It reminds me of Wako by Marukyu Koyamaen, though not as creamy and well-balanced.
Note: The can suggests 1g of powder with around 3oz of water, which is far more diluted than a standard usacha. I prepped as 2g powder with a 3oz water.
