Shinka (真価) is a stone-milled first-harvest matcha from Yame in Fukuoka, made from Okumidori and Yabukita leaf. It is sweet and nutty, with roasted chestnut and butter croissant notes over a creamy body and a light jasmine finish. Bitterness stays low, so it works whisked as usucha rather than only in a latte.
