Overview
Most premium matcha is a blend, so single-cultivar versions are worth seeking out when you want to taste what a cultivar actually does. This is Asahi, grown on Horii's own land in Uji.
Flavor
Asahi at this concentration produces a deep, almost oceanic umami with a pronounced nori note. The sweetness is restrained (3/5), and there's a faint bitterness (2/5) that gives it edge instead of smoothness. That's the cultivar showing through.
Verdict
I'd drink this as usucha (about 2g to 70ml at 80°C) before koicha. The savory profile is more interesting thin, where the seaweed character sits forward instead of getting buried under thickness.

Single-cultivar Asahi obsession 💚🌿
Mumon is the first Horii Shichimeien I've tried and now I really get the hype around their stuff. It's a 100% Asahi cultivar matcha which is rare (apparently Asahi is hard to grow??). Anyway, deep umami with this little dark-chocolate hint underneath that I keep noticing. Color is electric green. I prefer it as usucha but I imagine koicha is wild.
100% Asahi cultivar and you can taste it
Mumon is single-cultivar Asahi which I gather is unusual. As usucha you already get koicha-level depth which is impressive but also makes me wonder if I should be drinking it as koicha instead. The dark-chocolate bitterness people talk about does come through, but it's subtle. Not for someone who wants their matcha to taste like sweet grass.
