Valentine's Matcha is a Florida brand started in 2026 by pastry chef and cookbook author Valentina Mussi, who spent a winter in Japan working with a Shizuoka farm near Mount Fuji to build the line. The name comes from a nickname tied to her Italian name day. Everything is JAS organic single-origin Shizuoka Yabukita, split between a first-harvest tin for drinking and a third-harvest bag for baking.
