Joyo No. 3 is hand-picked Samidori from the Kizu River flats in Joyo, where the plants root in sandy, well-drained soil fed by the nutrient-heavy silt local growers call niko. It grinds very fine and pours a deep green, leading with a wide, clean umami that carries earth and a little nuttiness rather than any single food note. Bitterness and astringency sit far in the background, so it stays easy to drink even whisked thick as koicha.
