Hatoya Matcha

Hatoya (八十八良葉舎, Hatoya Ryoyousha) opened in 2019 as a 39-square-foot tea stand beside Kurumazaki Shrine in Arashiyama, Kyoto. Nobuhiro Maruyama spent ten years as a barista before a cup of gyokuro turned him toward Japanese tea, and he still joins the harvest at the farms he buys from. The matcha comes from named Kyoto Prefecture growers in Ujitawara, Uji Shirakawa, Uji Gokasho, Joyo and Wazuka, with the premium tier sold as single-cultivar lots and two roasted matcha made by firing tencha at high heat.
