Etsu is hand-picked Ujihikari, a cultivar born in Uji and still grown in small quantity, from a Gokasho producer with a competition record. Umami runs through the whole cup, earthy and very smooth from the fine grind, though grassiness and a little bitterness surface as the bowl cools. As koicha the umami turns denser and picks up a nutty edge.
