Hana is hand-picked Saemidori, a Kyushu cultivar that is hard to grow in Kyoto's climate, from a hillside garden at Gokasho in Uji. It tastes of sweet potato and milk, with umami spreading wide across the palate and very little bitterness. The finish stays clean, which is why it works in confectionery as well as in a bowl.
