Miyabi is hand-picked Asahi, a cultivar with a short harvest window that is difficult to grow, and it sits at the top of Hatoya's price list. Umami dominates. The aroma is sweet, and there is very little bitterness or astringency behind it, which leaves it workable as usucha or koicha.
