TL;DR
A mild matcha with a pleasant bitter finish, best suited for lattes.
Prepared as
As an usacha snob, I was a bit let down by Uji Mukashi. When prepared traditionally, it had a slight sweetness and moderate umami, followed by a pleasant bitter finish. The overall flavor was mild and delicate. I found it palatable, but not exciting.
Mukashi seems to come to life when prepared as a latte. The flavor paired well with almond milk, which I suspect was because it's on the lighter side. The delicate flavor may not shine through when used with a heavier milk, like oat or traditional skim.
Overall, I'd recommend Uji Mukashi for latte fans. It's not a matcha I'd purchase again for daily usacha, and definitely not koicha.
