Overview
Asagiri-no-Mukashi is one of Nakamura Tokichi's higher koicha grades. Tokichi's framing for the name (morning mist) is on point. The umami is high, 5 on our scale, but it lands rounded and quiet rather than dense.
Flavor
Sweetness arrives with the umami rather than after it. Almost no bitterness or astringency. The vegetal character is full but reads as cooked greens, not raw.
Verdict
Built for koicha. Holds up as a thicker usucha if you want to stretch it.
