Yame matcha that earned my respect
I don't usually go for Yame stuff because nutty/sweet is not my thing, but Shinme has actual depth. The cacao note actually comes through, almost a roasted bitterness behind the umami. Whisked thick it gets borderline savory. I still wouldn't make it koicha because the bitterness ramps up at higher concentration. As usucha though, very impressive.
Holds up in oat milk, decent body
Tried Shinme as my Yame variety pick. Slightly more aggressive than Hinata in latte form. The cacao/espresso notes Kettl describes do come through, especially with whole milk over oat. A little more astringent than I prefer for daily but it works for occasions when I want something darker tasting. 30g lasted about three weeks.
Dream matcha!
I really can't think of a better fit for what I like in a matcha! There is so much nuttiness and umami. There is no bitterness even when I make it as usacha. And yes, I've committed the sin of preparing this very expensive matcha as a latte once or twice lol.
