Uji Hikari Cultivar Matcha
Uji Hikari is a native Uji cultivar associated with the highest tier of ceremonial matcha. Slow-yielding, deeply shaded, typically blended into premium offerings.
Uji Hikari was developed in Kyoto and registered in 1954. The plant is well-suited to the long shading periods that the highest grades of matcha require, and it produces leaves with a particularly fine cellular structure that holds up well to stone-grinding.
On the cup, Uji Hikari shows a focused umami with subtle sweetness and a fine, smooth texture when whisked. Production is small enough that single-cultivar Uji Hikari matcha is rare; you will more often see it as one named component in a top-grade blend.
