Yame Matcha

Yame is a mountain region in Fukuoka Prefecture on the island of Kyushu, recognized as a traditional matcha-producing region.

Yame produces a fraction of what Uji or Shizuoka do, but a disproportionate share of what comes out of Yame is premium-grade. The Yabe River valley's combination of mountain fog, cool nights, and well-drained soil produces tencha with notably soft umami and pronounced sweetness.

A good origin to try if you want a counterpoint to Uji: same level of refinement, different flavor signature. Hoshinomura is the most famous sub-region within Yame.
