Shirakawa, Uji Matcha
Shirakawa is a small village inside the Uji region, on a north-facing slope that produces some of the most prized tencha in Japan.
Shirakawa sits in the hills above the Uji River, where cool mountain air and consistent fog create slower leaf growth than the valley floor. Farmers here work small plots, often under traditional reed and straw shading rather than synthetic mesh. That is more labor-intensive but produces a different flavor curve.
Shirakawa matcha tends to be more concentrated than general Uji production: heavier umami, a denser mouthfeel, a longer aftertaste. Several of the highest-grade ceremonial matchas from Marukyu Koyamaen and other premium producers are sourced specifically from Shirakawa fields.
